Roasted Beet and Goat Cheese Sandwiches with Sauteed Cabbage.

Out of everything in the CSA share this week, I was most excited about the beets. Beets are a vegetable that I have long wanted to be re-acquainted with. My childhood memory of beets involve them pickled alongside eggs. Which I absolutely hate. There aren’t very many food items that I hate: pickles, pickled eggs and beets, sauerkraut. Notice a trend? Anyway, they are so much better roasted!

I made them into these sandwiches, inspired by this recipe.

I sauteed some cabbage to have alongside, since I have a head of cabbage the size of a small asteroid.

  1. Thanks to my CSA I am now a lover of beets as well. Roasting beets is my favorite way to enjoy them as well. Love the idea of beet and goat cheese sandwiches. Looking forward to trying this with my next batch of beets šŸ™‚
