Roots: It’s what’s for dinner.

Hello there. The bounty of produce that is readily available in Western PA during the winter months makes December a wonderful time to join a CSA for the first time, doesn’t it? No, actually, it doesn’t. But it DOES make for a great challenge! This is what I am up against:

What are you looking at? Russet potatoes, ginormous carrots, black radishes, a plethora of sunchokes (I honestly had to ask a friend what they were. Had no idea) white turnips, onions, green kabocha squash, celebration squash, a lettuce mix,  mustard greens, and two cheeses: a colby and a goat cheese.

And this little guy, who missed the first photo. Somehow, I must use all of this in two weeks. That’s my goal anyway! Stay tuned.
